Catholic Baptism....?

I'm currently engaged to a Catholic man whereas I myself am Methodist. It doesn't really cause any problems between us as both of us tend to take a more "relaxed" standpoint on our beliefs. However we are both still comforted by the religions we grew up with our entire lives and choose to maintain them. His main concern is that he has always imagined having his future children baptized Catholic, which I'm fine with. My only real concern is that they grow into good people who have a relationship with God and Jesus, whether it be through Catholicism or Methodist. My question is if we do have our future children baptized Catholic is it necessary for both the parents to have been baptized Catholic? His mother said it was the Catholic law and he presented me with the idea of converting, which I'm still on the fence about. Is this true or can it only be one parent who is Catholic?
